Was macht eine gute Tomate aus? Würziger Geschmack, hoher Fruchtanteil oder reich an Vitaminen, so würden wohl spontane Antworten lauten. Doch die Tomate von heute muss eigentlich zuerst einmal ganz andere Anforderungen erfüllen: Sie muss den Transport in grossen Camions reibungslos überstehen, nach dem Kauf noch ein paar Tage haltbar sein und zudem noch schön aussehen. Und ja, günstig muss sie natürlich sein. Ein beachtliches Anforderungsprofil also, an dem sich die grossen Schweizer Gemüseproduzenten betriebswirtschaftlich orientieren müssen. Der Geschmack spielt dabei oft nur noch eine Nebenrolle. Die breite Masse goutiert das. Das liegt an der Bequemlichkeit von heute, oder vielleicht daran, dass viele Konsumenten die Tomaten von «früher» gar nicht mehr kennen, weil diese der Standardisierung zum Opfer gefallen sind.
